Help! How do i cook a rack of lamb in a convection oven?

I have been TRYING to cook my 2 racks of lamb for the past hour and 20 minutes but its STILL RAW! I am using a convection oven for the first time. The directions on the rack of lamb i bought said to cook it in oven for 30-35 minutes at 425 degrees. So I set it on bake and at 425 degrees.... but 35 minutes later, it was still fully RAW! So I put it back in for 30 minutes... Still raw... another 20 and its brown on outside where it is breaded but its totally raw inside. What the heck? It was fully defrosted and has been in there for the past hour and 20 minutes... it was covered in foil, but now i just uncovered it. Perhaps it will cook better that way??? Help please... Im super hungry for this lamb over here and the veggies and rice are waiting for me to gobble them up. Thanks!!!!
