Is it possible to re-install granite countertops?

My granite countertop installation is not level. They used some type of adhesive or caulk to adhere it to the cabinets. There is no plywood only the 3cm slab. Is it possible to remove the countertops without damaging them, level the cabinets and then re-install? There are two very small seams, less than 2" each, that attach a strip behind the range. Can those seams be broken without damage? I don't think the undermount sink will be an issue. Thanks for your help.
